These Thai-inspired burgers are absolutely delicious! I highly recommend toasting the buns on the grill for added flavor!
I decided to step away from the classic Mother’s Day Brunch and take advantage of the beautiful day we had in Denver by grilling! I still had never tried the famous Beyond Burger and I always walked by it in Whole Foods and told myself one day I would buy it and try it out. Finally, today was the day and with a bit of extra love I transformed the Beyond Burgers into delicious Thai Sweet Chili Burgers that popped into my head in honor of the amazing Trader Joe’s Thai Sweet Chili Veggie Burgers!

INGREDIENTS
General
- Pretzel Bun (Pretzilla)
- Beyond Burger (Beyond Meat)
- Cilantro, chopped
- Green onion, (Chives would be great too) chopped
- Bean sprouts
- Alfalfa
- Thai Sweet Chili Sauce
- Vegenaise (Follow Your Heart)
Burger Dry Rub
- 1 tsp Red pepper flakes
- 1 tsp Garlic sesame seeds (Regular is fine)
- Pinch Hawaiian salt (Pink Himalaya salt)
- 1/2 tsp Oregano
- 1/2 tsp Basil
Pickled Red Onions
- 1/2 Red onion, sliced
- 3/4 c White vinegar
- 1/2 c Apple cider vinegar
- 1/4 c Water
- 1/4 tsp Black pepper
- 1 tsp Peppercorns
- 2 Garlic cloves, sliced
- 1 Bay Leaf
INSTRUCTIONS
- Defrost the frozen Beyond Meat burgers in the refrigerator overnight.
- Combine all the pickled onion ingredients in a sealable container (mason jars are great).
- Let your sliced red onions marinate for at least 3-4 hrs, but overnight is best.
- Heat up the grill and grill the burgers to your preference. I have grill mats that aren’t very expensive from Amazon that I’d highly recommend because you still get the grill marks, much cleaner, and zero cross contamination if you are at a rental unit place with shared grills.
- Toast your buns by laying them on top of the grill or you can use your toaster. Just don’t throw them in the oven or it’ll dry up!
- Start the assembly. First add the spreads. Spread the Thai Sweet Chili Sauce on the top bun and the Vegenaise on the bottom bun.
- Place the alfalfa on the bottom bun and plop your party on top followed with the pickled onion and bean sprouts.
- Then place cilantro and green onion on the top bun to stick to the sweet chili sauce. Place the top bun on top and your burger is completed.
I hope you enjoy these asian inspired burgers and I highly recommend getting some sticks to help keep the burgers standing up, but if you are just going to eat them right away then don’t bother and ENJOY!
