In all my life I absolutely hated granola and didn’t like it in my yogurt, oatmeal, or smoothie bowls. Therefore, I never ate granola and didn’t understand why everyone raved about it so much until all of sudden just recently one day I decided to get some granola with my yogurt. I instantly and randomly became obsessed! I was eating yogurt and granola 24/7, but I noticed I would get painful stomach aches afterwards and I soon realized it was from the granola! I was devastated. I cut the granola cold turkey, until one day I decided to try and make my own granola. So I looked up some recipes and figured out the structure of making granola and came up with this recipe based on my favorites. Best part is that I eat granola nearly everyday and haven’t had any stomach issues at all!

INGREDIENTS
- 1 1/2 c Rolled Oats
- 1/2 c Pumpkin Seeds (Raw, Crushed)
- 1/2 c Pecans (Raw, Crushed)
- 1/2 c Coconut Shreds (Unsweetened)
- 1/4 c Agave
- 1 tsp Vanilla Extract
- 2 Tbsp Cinnamon
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- In a large bowl, combine your dry ingredients (oats, pumpkin seeds, pecans, and coconut shreds).
- In a small bowl, whisk together your wet ingredients (agave, vanilla extract, cinnamon).
- Pour the wet ingredients mixture into the large bowl of dry ingredients and make sure the dry ingredients are evenly coated.
- Using a large baking pan with either parchment paper or a baking mat liner, layout the granola mixture evenly.
- Bake for 10 minutes, then flip the granola using a spatula and bake for another 10-15 minutes until golden brown.
I know it is very easy to buy ready made granola at the store, but it’s also much healthier to make some homemade granola instead. It is very simple, quick, and actually cheaper. I hope you enjoy this granola recipe as much as I do!
