With summer coming to an end and my traveling starting to slow down, I start to crave having routine, healthy home cooked meals, and structure back into my life. I am always looking for quick, easy, healthy, and delicious meal ideas that are great for those days or weeks that you just need to reset. Food is power and being able to nourish your body after one too many treats here and there is vital. We are all not perfect and can’t eat 100% healthy all the time, but that is perfectly fine and necessary for our own mental health.

When in need of a good reset, I love to throw some cooked veggies together on top of a hotbed of brown rice. This Detox Stir Fry is a quick and easy recipe that incorporates the perfect veggies to get you reset and back on track for the week!

Here’s the 411 for those not familiar with the stars of this recipe:

  • Sesame Oil - Absolutely delicious to cook with, especially with Asian food. It will give your stir fry that needed bump in flavor. This can be found in the Asian section of any grocery store.
  • Liquid Aminos - Great healthy soy sauce alternative that I recommend you try to incorporate more into your life. This can be found in most grocery stores in the condiments section.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 2 servings

INGREDIENTS

  • 1½ c compact Kale (3-4 stems), shredded into bite size pieces
  • ½ small White Onion, diced
  • 1 medium Carrot, shredded
  • ½ head of Broccoli, chopped into bite size pieces
  • 1 c Green Beans
  • 1 tsp Sesame Oil (optional)
  • ½ c Water
  • 2 Tbsp Liquid Aminos (Soy Sauce or Coco Aminos will work)
  • ¼ tsp Garlic Powder
  • ½ tsp Onion Powder (optional)
  • Red Pepper Flakes to top (optional)
  • Roasted Sesame Seeds to top (optional)
  • Sriracha (optional)
  • 2 c cooked Brown Rice (base of stir fry)

INSTRUCTIONS

  1. Wash all vegetables. Remove stems from kale and rip into bite size pieces. Dice onion. Shred carrots. Chop broccoli into bite size pieces.
  2. On medium heat with a medium-large saucepan, saute diced onion with sesame oil (If you’re not using oil, then skip this step and add onions in following step). Saute onions until translucent.
  3. Add remaining vegetables (kale, carrots, broccoli, green beans) with ½ c of water. Cover the pan with a lid and steam for 4-6 minutes (depending on how soft you prefer your vegetables).
  4. Add liquid aminos, garlic powder, and onion powder. Evenly coat vegetables and remove from heat.
  5. Top brown rice with stir fry, red pepper flakes, roasted sesame seeds, and Sriracha (if you want it spicy).

When you dig in and finally devour that first bite, I can promise you that you’ll already start to feel 100% better, healthier, and ready to get back on that health grind. I hope you ENJOY detoxing and eating delicious food!
