Easy Kale Salad

This simple, easy kale salad is sure to be a hit with everyone who tries it. The key to making this salad delicious and healthy is to use a bit of olive oil or to blanch the kale. ENJOY!

I was introduced to a healthy and plant-based lifestyle at a young age because it saved one of my family member’s lives. I have personally witnessed the healing powers of a plant-based lifestyle and I am a firm believer that it is the healthiest way to live life. I don’t live a perfect plant-based lifestyle and I enjoy splurging on some “unhealthy” snacks or meals here and there, but I think it’s great to be able to have a foundation that supports you in everything that you do.

One of the first health food stores that my family loved to get food from was called Umeke Market. They served delicious healthy plant-based products and food. One of my favorite salads from there was their simple Kale Salad, which is odd considering most people don’t necessarily like the taste of raw kale. I personally don’t like the taste of raw kale, but with some easy tips and tricks on how to prepare kale I can guarantee you that kale, along with all its amazing benefits, will become your new best friend.

I decided to remake the delicious Kale Salad from Umeke Market and I have to admit I am happy with this Easy Kale Salad I was able to put together. It’s such a simple and delicious recipe that is perfect for any appetizer, lunch, or pot luck addition.


Here’s the 411 for those not familiar with the stars of this recipe:

  • Liquid Aminos: Great healthy soy sauce alternative that I recommend you try to incorporate more into your life. This can be found in most grocery stores in the condiments section.

Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 4


INGREDIENTS

  • 1 Bunch of Kale (6-8 stems), shredded into bite size pieces
  • 1 small Purple Cabbage (2 c), shredded
  • 3 medium Carrots (2 c), shredded
  • 2 tsp Olive Oil (optional)
  • 1 1/2 Tbsp Liquid Aminos (Soy Sauce or Coco Aminos will work too)
  • 1/2 Lemon (optional), juiced
  • 1/4 – 1/2 tsp Garlic Salt (optional)

INSTRUCTIONS

  1. Wash, prep, and chop/shred vegetables.
  2. If you’re using olive oil, then place kale in a large bowl and add olive oil. Massage kale with hands for 5 minutes to soften.
  3. If you’re not using olive oil, then bring a pot of water to a boil. Once boiling, place kale in water for 1-2 minutes and then quickly wash kale with cold water to stop the cooking. Rinse, dry, and place kale in a mixing bowl.
  4. Add carrots, purple cabbage, liquid aminos, lemon, and garlic salt to the bowl and mix thoroughly.

Massaged or blanched kale will change your salad game completely, especially if you have a difficult time digesting raw kale. I am confident to say that this easy salad will allow anyone and everyone to ENJOY the amazing benefits of kale!
