Nothing says good morning better than some fruity and sweet cold oats! These delicious overnight oats are the perfect thing to get you through the week or to start the weekend!
I have to wake up very early to get to work by 6:00am every morning, so as much as a savory cooked breakfast or sweet smoothie bowl sounds I unfortunately don’t have time. Therefore, I am a huge advocate for easy grab and go breakfasts and brings me to my cold oats breakfast obsession. I love making cold oats because I can easily prep it the night before and simply grab it and go to work. I ate this all throughout college and I didn’t really enjoy it because I always kept it very basic and boring, so I decided to make a change and put a little more effort into making my morning oats much more enjoyable starting with this delicious Blueberry Cheesecake Oats!

INGREDIENTS
Blueberry Cheesecake Batter
- 1 c Cashews
- 1 1/2 c Blueberries (Frozen is great)
- 1/2 c Unsweetened Almond Milk
- 1/4 c Agave Nectar
- 1 Flaxseed Egg (1 Tbsp Flaxseed Meal + 2.5 Tbsp Water)
- 1/2 tsp Lemon Juice
- 1 tsp Apple Cider Vinegar
- 1/2 tsp Vanilla Extract
Assembly
- 2 c Blueberry Cheesecake Batter
- 2 c Quick Oats (Rolled Oats are fine)
INSTRUCTIONS
- Soak cashews in water for 3-4 hours or overnight to soften. (If you are limited on time, then soak cashews in hot water (boiled) in a bowl covered in plastic wrap for 10 minutes)
- Prepare flaxseed egg by combine flaxseed meal with water in a small bowl. Let this sit for 5 minutes to thicken.
- Defrost blueberries if you are using frozen blueberries.
- Drain and rinse cashews and add all ingredients into a food processor or blender. If you’re using defrosted blueberries, then do not include the liquid from defrosting.
- Blend until smooth and transfer into a large mixing bowl.
- Add quick oats or rolled oats to large bowl and fully combine.
- Transfer to an airtight container and let it sit overnight in the refrigerator to thicken.
I can promise you that these oats will get you going in the morning and even motivate you to wake up just to indulge in these creamy, thick, delicious oats. Also, you can add as many toppings as your heart desires, including granola! We all have our tips and tricks to get moving in the morning and I hope these oats add a little more inspiration, so ENJOY!
